The review

This is leagues ahead of the Bibigo packet I tried last. It actually leans into that deep fermented umami in both smell and taste, which is exactly what I was looking for.

The garlic is still strong, but this time it blends properly with the marine aromas of the fish sauce rather than just overpowering everything like a raw onion. The texture is great too; the cut radish cubes are properly crunchy and full of flavour, adding some nice variety to the leafy cabbage.

Best of all, that funky fizz is actually there. It complements the salty, savoury profile perfectly, while the spice just sits nicely in the background without taking over. This is definitely my favourite store-bought kimchi so far.
